Officially Fall
Well, I guess it’s actually fall and all the bins that were once filled with watermelons are filled with pumpkins, squashes and gourds – except for a few – hehe! I do really like watermelon but I have to give it up for the change of season, I guess. Everything seems to be pumpkin spiced right now. Actually carrot cake spices are very similar to pumpkin pie spices.
Here in Northern California we haven’t really felt that fall crispness so much yet. But, the days are getting shorter and it seems like it’s so late even when it’s not! 9:00pm bedtime anyone? Yep, by the time it’s 9, it seems like so much later. What’s gonna happen when the clocks are set back an hour – talk about early bedtime or at least early yawning time!
I love to drink fresh carrot juice so I thought a smoothie with carrot juice sounded interesting – perfect fall color, right? So, in keeping with the fall theme, this carrot cake spiced smoothie made with a fresh carrot juice base was created.
Here is the Smoothie Recipe:
Carrot Cake Spiced Smoothie
Ingredients
- 1 cup fresh carrot juice
- 1 cup vanilla almond milk
- 6 T rolled oats
- 2 T ground flax seeds
- 3/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- 1/2 piece " of fresh ginger
- 1/2 teaspoon vanilla extract
- 2 teaspoons pure maple syrup
- cup i ice
Instructions
- Prepare fresh carrot juice in a juicer or buy some fresh juice
- Put all the ingredients in a blender and blend until smooth
- YIELDS: Approximately 2 cups
