Add the strawberries to a heavy bottom saucepan and add the agave nectar and stir together - let sit for a minute so the strawberries will release a little juice
Place the saucepan on the stove over medium heat and bring to a boil
As the strawberries are coming to a boil, mash them roughly with a potato masher or a spoon so that some of the berries are crushed, stir regularly
When the mixture comes to a boil, add the fresh lemon juice, a couple pinches of cinnamon (optional) and stir
Turn down the heat and cook about 15 minutes or so until the compote thickens. **It will continue to thicken as it cools**
When it has cooled, spoon the compote into a small glass jar and use right away or refrigerate
This compote makes a delicious topping for toast, pancakes, yogurt, cake, etc.
