Strawberry Compote

Simple Strawberry Compote (Jam)

Simple to make homemade strawberry jam using only 3 ingredients and ready in 30 minutes or less.

Ingredients

  • 2 1/2 cups fresh strawberries, about 1 lb.
  • 3 Tbsp agave nectar
  • 1 Tbsp fresh lemon juice
  • a couple pinches of cinnamon, optional

Instructions

  • Add the strawberries to a heavy bottom saucepan and add the agave nectar and stir together - let sit for a minute so the strawberries will release a little juice
  • Place the saucepan on the stove over medium heat and bring to a boil
  • As the strawberries are coming to a boil, mash them roughly with a potato masher or a spoon so that some of the berries are crushed, stir regularly
  • When the mixture comes to a boil, add the fresh lemon juice, a couple pinches of cinnamon (optional)  and stir
  • Turn down the heat and cook about 15 minutes or so until the compote thickens. **It will continue to thicken as it cools**
  • When it has cooled, spoon the compote into a small glass jar and use right away or refrigerate
  • This compote makes a delicious topping for toast, pancakes, yogurt, cake, etc.
