Banana Walnut Freezer Fudge
Are you looking for another way to use your ripe bananas? Well, look no further – enter Banana Walnut Freezer Fudge! Easy peasy with only a few healthy ingredients (guess I’m in freezer fudge mode right now Lol!
My husband sometimes likes to look around for a little snack in the afternoon to hold him over until dinner and satisfy his sweet tooth.
Well, this freezer fudge has been the perfect go-to treat. They’re delicious and also nutritious and curb that sweet tooth without being too sweet. Because of the walnuts, they’re very satisfying too.
It’s so great to have these types of guilt free treats on hand for when the mood strikes!
Another thing about this freezer fudge is that it has such a creamy consistency right out of the freezer. It never freezes solid. Because of this, it needs to be kept in a container in the freezer until you’re ready to eat it.
Here is the recipe:
- 3 cups walnuts
- 2 ripe bananas
- 2 Tablespoons unrefined coconut oil
- 3 Tablespoons pure maple syrup
- 1 teaspoon vanilla
- 1/4 teaspoon salt
In a food processor with the metal S blade, grind the walnuts first for about 2 minutes
Once they are clumping together, add the remaining ingredients
Process until smooth
Spoon this mixture into a parchment lined 8" x 8" pan and smooth the top
Cover the pan with plastic wrap
Place in the freezer overnight to firm
Cut into whatever size pieces you'd like
Transfer to a container with a tight fitting lid and put in the freezer
**NOTE: They will soften if kept out at room temperature, so always keep them in a sealed container in the freezer and take out when you want a piece
